Spicy Olive Super Food Salad On Fox 19

The Spicy Olive’s Super Foods Salad is a beautiful compliment to any meal! Dressed with our Lemon olive oil and Wild Blueberry balsamic vinegar to complement the berries in the salad. Use spinach greens, arugula, baby kale or a spring mix then top with cubed avocado, blueberries, raspberries, purple onion and walnuts. The salad looks like a rainbow and is just as delicious! The salad is full of nutrients and anti oxidants!

The Spicy Olive’s Key Lime Margarita

A delicious south of the border cocktail! Perfect for summer get togethers and any Cinco de Mayo party!

The Spicy Olive's Key Lime Margarita

Servings: 2 cocktails

Ingredients
  

  • 1/4 cup The Spicy Olive's Key Lime balsamic vinegar
  • 2 Tablespoons Agave or simple syrup
  • 1.5 ounces Tequila
  • 1 Tablespoon Triple Sec or Cointreau orange flavored liqueor
  • Sea Salt

Method
 

  1. Rim cocktail glass with lime juice and sea salt by placing lime juice along rim of glass and then place glass rim in a saucer of sea salt.
  2. Place Key Lime balsamic, syrup, Tequila and Triple Sec into a cocktail shaker with ice.
  3. Shake and then strain into the salted cocktail glass.
  4. Garnish with fresh lime wedge and serve. Ole!

The Spicy Olive’s Derby Pie

A delicious Kentucky tradition served every May to celebrate the Kentucky Derby. A take on Pecan pie, except perfected by adding walnuts, bourbon and some Dark Chocolate balsamic vinegar!

The Spicy Olive's Derby Pie

Prep Time 15 minutes
Cook Time 35 minutes
Total Time 50 minutes
Servings: 8 pie wedges

Ingredients
  

  • 4 eggs
  • 1 cup dark packed brown sugar
  • 1/2 cup light corn syrup
  • 2 Tablespoons whiskey
  • 3 Tablespoons The Spicy Olive's Dark Chocolate balsamic vinegar
  • 1/2 teaspoon Salt
  • 1/4 cup The Spicy Olive's Butter olive oil or melted butter
  • 2 cups walnuts or pecan pieces lightly taosted
  • 3 ounces dark chocolate pieces or semi sweet chocolate morsels
  • 9 inch deep dish unbaked pie crust
  • 1/3 cup nice looking peacan or walnuts halves

Method
 

  1. Preheat oven to 400 degrees F
  2. Beat eggs in a large bowl. Add brown sugar, whiskey, corn syrup, chocolate balsamic, salt and butter olive oil or melted butter to eggs, mix thoroughly.
  3. Sprinkle chopped pecans or walnuts and chopped chocolate or morsels in pie shell. Pour egg mixture over nuts and chocolate. Arrange pecan or walnut halves around edge of pie crust for decoration.
  4. Bake pie on middle rack of oven for 10 minutes. Reduce heat to 325 degrees F and continue baking 25-35 minutes, or until set.

Lemon Ricotta Pancakes with Blueberry Balsamic sauce

Light and Fluffy Lemon Ricotta Pancakes with Blueberry balsamic sauce are the perfect addition to special brunches for Easter, Mother’s Day, Father’s Day or other special breakfast celebrations!

Lemon Ricotta Pancakes with Blueberry Balsamic sauce

Servings: 4 servings

Ingredients
  

To make Lemon Ricotta pancakes
  • 1 1/4 cup all purpose flour
  • 3 Tbsp granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp Salt
  • 1 cup ricotta cheese
  • 1 large egg
  • 2 large egg whites
  • 1/4 cup lemon juice
  • 2 tsp lemon zest
  • 2 Tbsp The Spicy Olive's Lemon olive oil
To make Blueberry Blasamic sauce
  • 1 Tablespoon fresh lemon juice
  • 1 teaspoon cornstarch
  • 2 cups blueberries fresh or frozen
  • 1/4 cup The Spicy Olive's Wild Blueberry balsamic vinegar

Method
 

  1. In a small bowl, combine lemon juice and cornstarch and set aside. Add blueberries and blueberry balsamic to a small saucepan and simmer over medium heat. Stir until blueberries split and sauce begins to thicken. Add cornstarch to further thicken the sauce. Add sugar if you would like the sauce to be sweeter, to taste.
To make pancakes
  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda and salt. In a medium bowl, whisk together ricotta cheese, egg, egg whites, lemon juice, lemon zest, and Lemon olive oil. Gently fold the wet ingredients into the dry ingredients until the flour disappears. Do not over mix. The batter will be thick.
  2. Heat a griddle or non stick pan over medium heat. Spray with lemon olive oil or non stick spray. Drop 1/3 cup of the batter on hot griddle or skillet. Cook pancake until browned on the underside and beginning to set, about 2 minutes. Flip and cook on the other side about 2 minutes. Continue making pancakes until the batter is gone.
  3. Serve 2 pancakes per person with warm Blueberry balsamic sauce and a sprinkle of powdered sugar. Enjoy!

Lemon Blueberry Superfood Salad

This pretty salad is full of anti oxidants and nutrients!  A Spring salad that is sure to please Mom on Mother’s Day or serve at Graduation parties and Spring get togethers!

Ingredients
  

For the Salad
  • 6 cups salad greens spinach, arugula, kale or mixed greens
  • 3/4 cup fresh blueberries washed
  • 3/4 cup fresh raspberries washed
  • 1 Avocado sliced
  • 1/2 cup red onion chopped
  • 3/4 cup walnuts chopped and toasted
For the Salad Dressing
  • 3/4 cup The Spicy Olive's extra virgin olive oil or The Spicy Olive's Lemon Olive oil
  • 2 tsp lemon zest
  • 1 Tbsp The Spicy Olive's Champagne & Roasted Garlic Mustard
  • 3/4 cup The Spicy Olive's Wild Blueberry balsamic vinegar
  • salt and pepper to taste

Method
 

Salad
  1. Place salad greens in a large serving bowl. Top with berries, avocado, and red onion.
Dressing
  1. Place mustard into a small mixing bowl. Add Blueberry balsamic and whisk together. Slowly drizzle the olive oil into the balsamic mixture, whisking constantly until olive oil and balsamic are completely mixed and dressing begins to thicken. IF you used the Lemon olive oil you may not need the lemon zest. If you used a single varietal olive oil, add the lemon zest and whisk to incorporate.
  2. Pour salad dressing over salad and toss to evenly coat. Top salad with walnuts and serve. Enjoy!
