Ideas:
- Combine with Harissa or Chipotle EVOO and Garlic EVOO to marinate flank or skirt steaks — makes great fajitas!
- Add to chili or baked beans as your “secret ingredient”
- Drizzle on fresh berries or ice cream
- For a great dessert, carmelize fresh pineapple chunks or brush on pears, peaches or pineapple rings and then grill
- Combine with Blood Orange EVOO for a pork tenderloin marinade
The Spicy Olive’s BBQ Marinade
1 cup of The Spicy Olive’s Cinnamon Pear balsamic vinegar
1 cup of The Spicy Olive’s Dark Chocolate or Espresso balsamic vinegar (or 1/2 and 1/2)
1 cup chili sauce
1 teaspoon chili powder
1 clove of garlic, minced
1 tablespoon liquid smoke
2 bottles of beer (not light beer)
Mix together and use to marinate pork or beef ribs or a whole chicken. Best to allow to marinate overnight for a fuller flavor. Cook in a 250 degree oven for 4+ hours to really make them tender and then finish on the grill for a smoky taste. For the chicken, you can grill over a beer can (like beer can chicken) until it reaches an internal temperature of 170 degrees.
