The Spicy Olive’s Cream Puffs
Homemade Cream Puffs are an elegant dessert to make for a special occasion. Makes delicious addition to a Brunch menu.

Ingredients
- 1 cup Water
- 1/2 cup Butter or 1/4 cup butter and 2 Tablespoons EVOO, plain, Butter or Blood Orange
- 1 cup all purpose flour
- 4 whole eggs
- 1 Tablespoon The Spicy Olive's Black Cherry balsamic vinegar or The Spicy Olive's Raspberry balsamic
- 1 12 oz bag Dark Chocolate chips
- whipped cream or ice cream to fill puffs

Instructions
- Preheat oven to 400 degrees F.
- In a 2 1/2 quart saucepan, heat water and butter ( or butter and olive oil ) to a rolling boil. Stir in flour. Reduce heat to low and stir over low heat for 1 minute stirring vigorously until mixture forms a ball. Remove from heat.
- Beat in eggs all at once with a spoon. Continue mixing until smooth.
- Drop dough by level Tablespoon about 1 1/2 inches apart on an ungreased cookie sheet to make 36 puffs.
- Place in preheated oven and bake 20-25 minutes, until puffed and golden. Cool away from draft, about 30 minutes.
- Meanwhile in a separate bowl, melt a bag of dark chocolate chips and mix in 1 Tablespoon The Spicy Olive's Black Cherry, or Raspberry balsamic vinegar.
- Cut puffs horizontally in half. Fill puffs with whipped cream or vanilla ice cream. Serve drizzled with chocolate topping. Enjoy!
