For Spinach Salad
1packageBaby Spinach
3/4cup pomegranate arils
Instructions
Prepare the chicken by marinating it in a bowl with olive oil, lemon juice, salt and herbs. Marinate for at least 30 minutes.
Grill the chicken on a grill pan, about 8 minutes per side, until browned and cooked through. Slice chicken and set aside.
Whisk together all vinaigrette ingredients until well blended.
Place spinach in a salad bowl and top with pomegranate arils and sliced chicken. Drizzle Pomegranate vinaigrette over salad. Toss to evenly coat and serve.
