The Spicy Olive’s Roasted Pumpkin Seeds
Roasted Pumpkin seeds are a delicious treat to enjoy after carving your pumpkin for Halloween. Save the seeds and roast them, they are good for you-full of vitamins, minerals and fiber!

- seeds from 1 pumpkin
- 2-3 Tablespoons The Spicy Olive's Chipolte Olive Oil or Butter, Tuscan Herb, or other flavored oilve oil
- salt and pepper to taste

Instructions
- Remove seeds from the inside of a pumpkin. Remove pulp and flesh from the pumpkin seeds. Place seeds on a paper towel or parchment paper and allow to dry before roasting - Can be a quick drying period or overnight.
- Coat seeds with olive oil of your choice and spread on a baking sheet. Heat oven to 325 degrees. Place seeds in preheated oven and roast. After 15 minutes, turn and toss the seeds and return to roast in the oven. Continue to do this until the seeds are roasted and golden brown.
- Place seeds in a serving bowl and season with salt.
