The Spicy Olive’s Roasted Red Pepper Hummus

Ingredients
  • 116 ounce can of garbanzo beans or chickpeas
  • 1/4cup liquid from can od chickpeas
  • 3-5Tbsp lemon juicedepending on taste
  • 1 1/2Tbsp tahini-I subsititue The SPicy Olive’s Roasted Sesame oil
  • 1jar Roasted Red peppers
  • 1/2teaspoon Salt
  • 2Tbsp The Spicy Olive’s olive oilplay with different flavored oils like Harissa, Tuscan Herb or a Robust single varietal olive oil for more health benefits
Instructions
  1. Drain chickpeas and set aside liquid from can.
  2. Combine remaining ingredients in blender or food processor.
  3. Add 1/4 cup of liquid from chickpeas.
  4. Blend for 3-5 minutes on low until thoroughly mixed and smooth. Place in serving bowl, and create a shallow well in the center of the hummus. Add (1-2 tablespoons) of olive oil in the well. Garnish with parsley (optional).
  5. Serve with pita chips (fresh and warm or toasted) or with fresh veggies like red pepper strips, carrots and celery. Enjoy!!
